香煎虾饼

虾肉250克(Shrimp 250 g)

胡萝卜丝 30克(Shredded carrots 30 g)

西芹碎30克(Chopped celery 30 g)

荸荠碎80克(Chopped water chestnuts 80 g)

面包屑 2汤匙(Bread crumbs 2 tbsp)

盐1/3茶匙(Salt 1/3 tsp)

黑胡椒粉1/3茶匙(Black pepper 1/3 tsp)

烤海苔片Roasted Seaweed

今天给大家分享一道我的私房配方 煎虾饼,它的特点是食材和调味料都很简单 味道搭配恰到好处,虾肉鲜甜 口感爽脆,做法也很简单。

1、首先我们取250克的去壳的虾肉。

2、用一把大的刀 把虾一个个的压碎。

3、然后把所有压碎的虾肉 用刀剁成泥状。

4、虾泥放到碗里 加入1/3茶匙盐和1/3茶匙黑胡椒粉,朝一个方向搅拌,一直到虾肉泥起粘性。放在一边备用。

5、取罐头荸荠 80克,你也可以用新鲜的,剁碎 尽量剁细一些。

6、去西芹30克 同样剁细。

7、胡萝卜30克 擦成很细的丝。

8、现在我们把之前的虾肉和荸荠碎、西芹碎以及 胡萝卜丝放在一起,再加入2汤匙面包屑,把它们搅拌均匀。

9、做成三角虾饼形状或你自己喜欢的形状,这里我分成九份。

10、煎锅烧热,放适量的油,用中偏高火把虾饼煎到两面金黄酥脆。

11、取出来后用海苔片装饰一下,不但漂亮也让味道更丰富。

Today I will be sharing a new recipe I've created. savoury shrimp cakes The character of this dish is the simplicity of the ingredients and the delicious balance of flavours. the sweetness of the shrimp matches perfectly with the refreshing texture

 

first we will de-shell 250 grams of shrimps

 

use a large knife and press to mush the shrimp

chop up the mushed shrimp until it is paste like

add the shrimp paste into a bowl and add in 1/3 teaspoon of salt and 1/3 teaspoon pepper. mix in one direction until the paste gain elasticity

set aside

remove 80 grams of water chestnut, I'm using canned ones here but feel free to use fresh ones

chop into fine bits

chop up 30 grams of celery in the same manner

shred 30 grams of carrots

now we will mix the shrimp paste, the water chestnut, celery and carrot bits together. add in 2 tablespoons of breadcrumb, m\ix well

form into a triangle shape or any shape of your liking, I've divided into 9 parts here 

heat a pan until hot and add in some oil and panfry on medium high heat until the shrimp cakes are crispy on both sides

decorate with some toasted seaweed slices, this will add a beautiful visual touch and add an amazing smoking seafood taste to the dish
