苦瓜排骨煲

猪小排 300克(Pork ribs 300 g)

苦瓜(凉瓜)300-350克(Bitter Melon300-350 g)

葱15克(Green onion 15 g)

姜10克(Ginger 10 g)

红辣椒 15克(Red pepper 15 g)

豆豉 1茶匙(1 tsp fermented black beans)

料酒1汤匙(1 tbsp cooking wine)

李锦记蚝油 1汤匙(Lee Kum Kee oyster sauce 1 tbsp)

盐 1/4茶匙(1/4 tsp salt)

糖1/2茶匙(1/2 tsp sugar)
水 1/4杯(1/4 cup water)

 

 腌料:

盐 1/4茶匙(1/4 tsp salt)

白胡椒粉1/2茶匙(1/2 tsp white pepper)

酱油1茶匙(1 tsp soy sauce)

料酒1/2茶匙(1/2 tsp cooking wine)

生粉1.5汤匙(1.5 tbsp cornstarch)

 

今天给大家分享一道 有点特别的菜,苦瓜排骨煲,苦瓜就像它名字一样 味道是苦的,但它有利于健康,怎样做这道菜 能把它变成美味呢。我们就开始

 

1、首先我们要准备切好的小排骨约300克左右, 用清水洗净后 浸泡1个小时 去一下血腥。

2、然后捞出沥干 再用厨房纸吸干水份。    放到碗里 加入屏幕显示的腌料,抓匀之后,再放入1.5汤匙的生粉裹匀 腌制15分钟。

3、现在我们准备姜片 葱段和红辣椒等配料。

4、再把苦瓜对半切开,把里面的籽先去掉,再用勺子把中间的白色部分刮掉,这是为了去除一些苦味。

5、然后按视频显示的方法把苦瓜切成片状。放到碗里用1茶匙盐抓匀 静置10分钟,不要太长时间,这也是为了去除一些苦味。

6、把水烧开,把盐腌的苦瓜(不需要清洗)直接倒入锅内,加1汤匙的油 ,它会让苦瓜色泽好看,接着用大火把锅里的水再烧开 就可以把苦瓜捞出来,捞出的苦瓜放入一大碗的凉水里最好是冰水,这会让苦瓜口感更爽脆,泡凉之后捞出沥干 一边备用。

7、现在来处理腌好的排骨,煎锅 加1杯或更多的油,油温要烧到150摄氏度以上,放入排骨用中偏高火去煎,煎到两面金黄酥脆,同时看到排骨开始脱骨就可以取出备用了。因为腌料里加了酱油,煎出的排骨可能颜色比较暗 这就是我们要的,不用担心。

 

8、炒锅烧热,加1汤匙油,把前面准备的姜片、葱段和辣椒片全部放入,再加1茶匙豆豉 fermented black beans一起翻炒出香。再把苦瓜片放入稍微翻炒一下。加入屏幕显示的调味料,之后放入排骨一起炒匀。转入砂锅,加盖大火烧开 之后 再煮1-2分钟 即可。色彩丰富 美味可口的苦瓜排骨煲就做好了。

Today we will be making a very unique dish. bitter melon pork rib pot. Bitter melons are bitter but are very healthy. This recipe will magically transform this ingredient into a delicious dish. 

 

First we will cut up 300grams of riblets and soak it in clear water for 1 hour to get rid of the blood taste

Drain and pat dry with some paper towel. place the riblets in a bowl and add the seasonings shown  coat with 1.5 tablespoon of cornstarch and marinate for 15 minutes

Now we will prepare the ginger, green onions and red pepper and the other side ingredients

Now slice the bitter melon in half and deseed the white area with a spoon. this will remove some of the bitterness

Now slice the bitter melon up as shown and marinate with 1 teaspoon of salt for 10 minutes, this will also remove a bit more bitterness

boil some water and place the salted bitter melon slices into the pot. add 1 tablespoon of oil. this will bring out the greenness in the bitter melon. now cook on high heat wait until the water comes to a boil again and strain out the bitter melon. now immediately place the bitter melon slices in a bowl of ice water to achieve a crunchier texture. after its cooled drain and set aside. 

Place 1 cup of oil in a pan until the heat is 150degree celsius. panfry the riblets on medium high heat until both sides are crispy. once the meat begins to fall off of the bone it's ready. because we added the soy sauce the ribs will appear darker in color. 

 

Finally heat the pan hot again and add in 1 tablespoon of oil and add in the ginger green onion and red pepper slices. add in 1 teaspoon of fermented black beans and sauté until fragrant. add in the bitter melon and sauté then the seasonings shown. combine  ribs and transfer into a casserole pot. cover the lid and heat on high until it comes boil then cook for another  1-2 minute. this colourful and delicious dish is ready
