芒果糯米饭

国内朋友看这里(暂时不能观看)

糯米 1杯(Glutinous rice 1 cup)

椰奶 400毫升(Coconut milk 400 ml)

糖 1/3杯(Sugar 1/3 cup)

盐 1/4茶匙(Salt 1/4 teaspoon)

柠檬叶 (Lemon leaves)

葡萄干1汤匙(Raisins 1 tablespoon)

蔓越莓干 1茶匙(Dry cranberry 1 teaspoon)

芒果(Mango)

黑芝麻(Roasted black sesame seeds)

1、首先,把1杯糯米洗干净 浸泡至少6个小时以上 。

2、把碗里的水倒掉,如果碗底有少量的水留在里面 没关系 我们可以保留一点点水份。

3、把糯米平铺在一个容器里 尽量铺薄 会容易蒸熟。用中偏高火蒸熟  。

4、在蒸糯米的同时 ,我们要准备椰浆,把椰浆放到小汤锅里,放糖、盐,我妈妈还有放一片柠檬叶 增加特别的香气。烧开即可关火 不要烧太久  放在一边备用,最好能保留一点温度。

5、另外准备 一些葡萄干和一点点蔓越莓干  切碎。

6、现在 回到糯米饭这里,大约20-30分钟之间 糯米饭就可以蒸好了  只要看到糯米出现透明就说明熟了。

7、趁热 把椰浆倒入 糯米碗里 。记得 留下一点点椰浆最后用 。另外 加入葡萄干和蔓越莓碎,一起搅拌,加盖 让糯米吸收椰汁 约需20分钟。

8、现在是用芒果装饰了,你可以放上芒果片 或把芒果切成很薄的片 做成玫瑰花形状。 

9、最后 撒一些芝麻 淋上 椰浆 即成 。很简单的方法,在夏天烧烤的时候  配上这道甜点最好吃。

 

This weekend I visited my parents in Windsor and my mom happened to be hosting a party. She made this beautiful & delicious dessert with glutinous rice & mango that everyone loved. 

 

First wash clean 1 cup of glutinous rice, soak for at least 6 hours 

 

pour out the water in the bowl, don't worry about draining it completely, we will need to reserve just a bit of water in the bowl 

 

lay the glutinous rice flat in a container as thin as possible, so that they can cook faster. steam on medium high heat until it's cooked

 

while that is happening, we will prepare the coconut mixture. pour the coconut milk into a small pot and add in some salt & sugar, my mom also added in one piece of lemon leaf for additional fragrance. Once it has come to a boil, turn it off immediately  and set it aside, we want it to be lukewarm when we use it. 

 

now prepare the raisons & the dried cranberries, chop them up into little pieces 

 

at this point, the glutinous rice have been steaming for 20-30 minutes, once they are translucent, they are fully cooked. 

 

while they are still hot, pour in the coconut mixture. Leave a bit of it behind for later. add in the chopped raison & cranberry bits and stir to combine. keep the bowl in the steamer, cover with a lid and let the rice soak up the coconut milk completely, it should take about 20 minutes 

 

now for the final touch, add on slices of mango, my mom shaped them into little roses. 

 

sprinkle on some sesame seeds and drizzle on the coconut mixture from before. This is a simple dessert that is a delicious match with any summer feast, from parties to bbqs!
